It’s when winemakers finally breathe after a long winter in the cellar, and the wines begin to whisper promises of what’s to come. There’s a reason villages throw festivals in honor of the new season – because spring in Italy is felt, not just seen. And we’re bringing a little of the spirit to Cinghiale this week.

Barolo, Boasso “Gabutti” 2019 | Serralunga d’Alba, Piemonte
Spring in Piemonte is dramatic – mist rolling off the Langhe hills, cherry blossoms dotting the vineyards, and the faint scent of earth waking up. The same drama lives in Boasso’s “Gabutti”. The vineyard, nestled in the heart of Serralunga, is known for its power – nut 2019 brings a perfume that stops you in your tracks. Dried rose petals, violet, and sweet herbs ride over layers of dark cherry, iron-rich earth, and firm, dusty tannins. It’s young and muscular, but the bones are floral – like a vineyard in bloom with something serious on its mind.
Sauvignon Blanc, Fontodi “Meriggio” 2023 | Colli Toscana Centrale, Toscana
“Meriggio” means midday – that golden slice of time when the hits the hills just right, and the kitchen opens all the windows to let in the thyme-scented air. Fontodi’s Sauvignon Blanc is grown in the heart of Chianti, but it’s not your average Sauvignon. Fermented in steel and aged on lees, it smells like white peach, honeysuckle, lemon balm, and the faintest touch of fresh-cut grass. It has the texture of silk and the attitude of a garden in full bloom.
This is the wine for pranzo under the pergola. The wine for that first day warm enough to drink something chilled in the sun. It reminds us of spring Sundays in Italy – market vegetables, fresh fava beans, and pasta tossed with whatever the earth just gave you.
